Description

A rich and moist chocolate cake that embodies comfort and connection through home baking.


Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 2 cups chocolate fudge frosting (for filling and topping)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans thoroughly.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla to the dry ingredients. Mix until everything comes together and is well combined.
  4. Carefully stir in the boiling water until your batter is smooth. It may look thin, but that’s perfectly normal.
  5. Divide the batter evenly between the prepared pans. This helps ensure an even bake.
  6. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes. Then transfer them to wire racks to cool completely.
  8. Once cooled, spread chocolate fudge frosting on the top of one layer, stack the second layer on top, then frost the top and sides of the cake.

Using high-quality cocoa powder can significantly elevate the cake’s taste. Room temperature eggs help in evenly mixing the batter.
