Description

Ingredients

  • 1 ¼ cup all-purpose flour
  • 2 tablespoons cornstarch
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ½ cup unsalted butter (at room temperature)
  • ¾ cup granulated sugar
  • 2 large egg whites (room temperature)
  • 2 tablespoons canola oil
  • â…“ cup milk (room temperature)
  • 1 teaspoon vanilla extract
  • ¼ cup rainbow sprinkles for decoration
  • 1 stick unsalted butter (room temperature) for frosting
  • 1.5-2 cups powdered sugar
  • ½ teaspoon vanilla extract for frosting
  • 1-2 tablespoons milk or cream for frosting
  • A pinch of salt for taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together the flour, cornstarch, salt, and baking powder until thoroughly combined.
  3. Cream the butter and sugar together until the mixture is light and fluffy, about 3-5 minutes.
  4. Add the egg whites, canola oil, milk, and vanilla into the creamed mixture. Blend until all ingredients are well incorporated.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in sprinkles.
  6. Pour the batter into greased baking pans evenly and bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow the cakes to cool completely before frosting.
  8. Cut the cakes into cubes and layer in jars with frosting, repeating layers as desired.
