Ingredients
- 2 medium zucchinis
- 8 ounce (227 g) s (227 grams) of linguine or spaghetti
- 3 tablespoon (45 ml) s (42 grams) of unsalted butter
- 3 tablespoon (45 ml) s (45 milliliters) of olive oil
- 4 cloves of garlic, minced
- 1/4 teaspoon (1 ml) (1.5 grams) of red pepper flakes
- 1/2 pound (227 g) (227 grams) of large shrimp, peeled and deveined
- Salt, to taste
- Black pepper, to taste
- 1/4 cup (60 ml) (60 milliliters) of chicken broth or vegetable broth
- 2 tablespoon (30 ml) s (30 milliliters) of lemon juice
- 1/4 cup (60 ml) (15 grams) of chopped fresh parsley
- 1/4 cup (60 ml) (25 grams) of grated Parmesan cheese
Instructions
- Slice the zucchinis into thin ribbons using a vegetable peeler or spiralizer.
- Cook the linguine or spaghetti according to package instructions until al dente. Drain and set aside.
- In a large skillet, melt the butter with the olive oil over medium heat.
- Add the minced garlic and red pepper flakes to the skillet. Sauté for about 1 minute until fragrant.
- Add the shrimp to the skillet. Season with salt and black pepper to taste.
- Cook the shrimp for 2-3 minutes on each side until pink and cooked through. Remove shrimp from the skillet and set aside.
- Add the zucchini ribbons to the skillet and sauté for 2-3 minutes until just tender.
- Pour in the chicken or vegetable broth and lemon juice. Stir well to combine.
- Return the cooked shrimp to the skillet, along with the cooked pasta. Toss everything together.
- Add the chopped parsley and grated Parmesan cheese. Mix until well combined.
- Adjust seasoning with more salt and black pepper if needed.
- Serve immediately, garnished with extra parsley and Parmesan if desired.
