Ingredients

  • 2 cup (480 ml) s zucchini, shredded (about 300 grams)
  • 1 cup (240 ml) cooked white rice (about 200 grams)
  • 1 cup (240 ml) sour cream (240 milliliters)
  • 1 cup (240 ml) shredded cheddar cheese (about 115 grams)
  • 1/2 cup (120 ml) chopped onion (about 75 grams)
  • 1/4 cup (60 ml) butter, melted (about 60 grams)
  • 1 package (6 ounce (170 g) s) stuffing mix (about 170 grams)
  • 1/4 teaspoon (1 ml) black pepper


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded zucchini and cooked rice.
  3. Add sour cream to the bowl and mix until well combined.
  4. Stir in the shredded cheddar cheese and chopped onion.
  5. Season the mixture with black pepper, and mix thoroughly.
  6. Transfer the zucchini mixture into a greased baking dish.
  7. In a separate bowl, combine the stuffing mix with melted butter.
  8. Spread the buttery stuffing mix evenly over the zucchini mixture in the baking dish.
  9. Place the baking dish in the preheated oven.
  10. Bake for 30-35 minutes, or until the top is golden brown.
  11. Remove from the oven and let it cool for a few minutes before serving.
