Ingredients
- 2 cup (480 ml) s zucchini, shredded (about 300 grams)
- 1 cup (240 ml) cooked white rice (about 200 grams)
- 1 cup (240 ml) sour cream (240 milliliters)
- 1 cup (240 ml) shredded cheddar cheese (about 115 grams)
- 1/2 cup (120 ml) chopped onion (about 75 grams)
- 1/4 cup (60 ml) butter, melted (about 60 grams)
- 1 package (6 ounce (170 g) s) stuffing mix (about 170 grams)
- 1/4 teaspoon (1 ml) black pepper
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the shredded zucchini and cooked rice.
- Add sour cream to the bowl and mix until well combined.
- Stir in the shredded cheddar cheese and chopped onion.
- Season the mixture with black pepper, and mix thoroughly.
- Transfer the zucchini mixture into a greased baking dish.
- In a separate bowl, combine the stuffing mix with melted butter.
- Spread the buttery stuffing mix evenly over the zucchini mixture in the baking dish.
- Place the baking dish in the preheated oven.
- Bake for 30-35 minutes, or until the top is golden brown.
- Remove from the oven and let it cool for a few minutes before serving.
