Ingredients

  • 2 cup (480 ml) s grated zucchini well-drained* (approximately 3 medium zucchini)
  • 1 tablespoon (15 ml) finely chopped onion
  • 1/4 cup (60 ml) Parmesan cheese (25 grams)
  • 1/4 cup (60 ml) flour (32 grams)
  • 2 large eggs
  • 2 tablespoon (30 ml) s mayonnaise
  • 1/4 teaspoon (1 ml) oregano
  • 1/4 teaspoon (1 ml) salt
  • 1-2 dashes black pepper
  • 1-2 tablespoon (23 ml) s olive oil


Instructions

  1. In a medium-sized bowl, combine all the ingredients together, leaving out the olive oil.
  2. In a frying pan of medium to large size, warm the olive oil over medium heat. Add a generous spoonful of the mixture to the pan and cook until both sides are golden brown.
  3. Place the cooked patties on a plate lined with paper towels for a few seconds to drain, then serve right away. Enjoy your meal!
