Ingredients
- 1 pound (454 g) ground beef (450 grams)
- 2 medium zucchinis, sliced
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 ounces (411 g)) (410 grams)
- 1 cup (240 ml) shredded cheddar cheese (115 grams)
- 1/2 cup (120 ml) breadcrumbs (60 grams)
- 1 teaspoon (5 ml) dried oregano
- 1 teaspoon (5 ml) dried basil
- Salt to taste
- Black pepper to taste
- 1 tablespoon (15 ml) olive oil (15 milliliters)
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and bell pepper to the skillet.
- Cook until the onion is translucent, about 5 minutes.
- Add minced garlic and cook for another 1 minute.
- Add ground beef to the skillet and cook until browned.
- Drain excess fat from the skillet.
- Stir in the diced tomatoes, dried oregano, and dried basil.
- Season with salt and black pepper to taste.
- Simmer the mixture for about 5 minutes.
- In a baking dish, layer half of the sliced zucchinis.
- Spread half of the beef mixture over the zucchini layer.
- Add the remaining zucchini slices over the beef mixture.
- Top with the remaining beef mixture.
- Sprinkle breadcrumbs evenly over the top.
- Cover the casserole with shredded cheddar cheese.
- Bake in the preheated oven for 25-30 minutes.
- Remove from oven and let it cool for a few minutes before serving.
