Ingredients

  • 1 pound (454 g) ground beef (450 grams)
  • 2 medium zucchinis, sliced
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 ounces (411 g)) (410 grams)
  • 1 cup (240 ml) shredded cheddar cheese (115 grams)
  • 1/2 cup (120 ml) breadcrumbs (60 grams)
  • 1 teaspoon (5 ml) dried oregano
  • 1 teaspoon (5 ml) dried basil
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon (15 ml) olive oil (15 milliliters)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat.
  3. Add the chopped onion and bell pepper to the skillet.
  4. Cook until the onion is translucent, about 5 minutes.
  5. Add minced garlic and cook for another 1 minute.
  6. Add ground beef to the skillet and cook until browned.
  7. Drain excess fat from the skillet.
  8. Stir in the diced tomatoes, dried oregano, and dried basil.
  9. Season with salt and black pepper to taste.
  10. Simmer the mixture for about 5 minutes.
  11. In a baking dish, layer half of the sliced zucchinis.
  12. Spread half of the beef mixture over the zucchini layer.
  13. Add the remaining zucchini slices over the beef mixture.
  14. Top with the remaining beef mixture.
  15. Sprinkle breadcrumbs evenly over the top.
  16. Cover the casserole with shredded cheddar cheese.
  17. Bake in the preheated oven for 25-30 minutes.
  18. Remove from oven and let it cool for a few minutes before serving.
