Ingredients
- 2 tablespoon (30 ml) s butter
- 1/2 onion thinly sliced
- 1 small zucchini sliced in rounds 1/8 to 1/4 inch thick
- 1 small yellow squash sliced in rounds 1/8 to 1/4 inch thick
- 2 large cloves garlic minced
- 1/2 cup (120 ml) heavy cream
- 1/4 cup (60 ml) grated parmesan
- 1 cup (240 ml) shredded smoked gouda
Instructions
- Set your oven to 450 degrees to preheat.
- In a skillet that can go in the oven, melt the butter over medium heat.
- Add the onion slices and cook until they begin to turn golden at the edges, roughly 5 minutes.
- Mix in the minced garlic and continue cooking for another minute.
- Pour in the heavy cream and let it simmer until it becomes bubbly and starts to thicken.
- Gradually incorporate the parmesan cheese.
- Introduce the zucchini and yellow squash slices, cooking them for an additional 4-5 minutes.
- Top with the shredded smoked gouda, then transfer the skillet to the oven.
- Bake for 15-20 minutes or until the cheese achieves a golden brown color.
