Ingredients

  • 2 tablespoon (30 ml) s butter
  • 1/2 onion thinly sliced
  • 1 small zucchini sliced in rounds 1/8 to 1/4 inch thick
  • 1 small yellow squash sliced in rounds 1/8 to 1/4 inch thick
  • 2 large cloves garlic minced
  • 1/2 cup (120 ml) heavy cream
  • 1/4 cup (60 ml) grated parmesan
  • 1 cup (240 ml) shredded smoked gouda


Instructions

  1. Set your oven to 450 degrees to preheat.
  2. In a skillet that can go in the oven, melt the butter over medium heat.
  3. Add the onion slices and cook until they begin to turn golden at the edges, roughly 5 minutes.
  4. Mix in the minced garlic and continue cooking for another minute.
  5. Pour in the heavy cream and let it simmer until it becomes bubbly and starts to thicken.
  6. Gradually incorporate the parmesan cheese.
  7. Introduce the zucchini and yellow squash slices, cooking them for an additional 4-5 minutes.
  8. Top with the shredded smoked gouda, then transfer the skillet to the oven.
  9. Bake for 15-20 minutes or until the cheese achieves a golden brown color.
