Ingredients
- 1 cup (240 ml) shredded zucchini drained well
- 1 clove garlic grated fine
- 1/3 cup (80 ml) breadcrumbs
- 1/4 cup (60 ml) grated Parmesan cheese
- 1 large egg
- 2 tablespoon (30 ml) s chopped fresh chives (or 1 tablespoon (15 ml) dried chives)
- 1 tablespoon (15 ml) chopped fresh parsley (or 1/2 tablespoon (8 ml) dried)
- 1 teaspoon (5 ml) chopped fresh basil (or 1/2 teaspoon (3 ml) dried)
- 1 teaspoon (5 ml) chopped fresh oregano (or 1/2 teaspoon (3 ml) dried)
- Pinch of salt and pepper
- Tomato sauce for dipping
Instructions
- Set your oven to a temperature of 400ËšF and allow it to heat up. Lightly grease a baking tray with olive oil or use a non-stick spray. Put it aside for later use.
- Use a box grater to finely grate the zucchini onto a clean towel. Gather the towel ends and twist to remove excess water from the zucchini.
- With the fine side of the box grater, grate the garlic clove.
- In a mixing bowl, combine the squeezed zucchini, grated garlic, egg, breadcrumbs, Parmesan cheese, chives, parsley, basil, oregano, salt, and pepper. Stir thoroughly until all ingredients are well mixed.
- Scoop a tablespoon of the mixture and form it into small balls with your hands, then arrange them on the prepared baking tray.
- Place the tray in the preheated oven and bake for 15 to 18 minutes until the bites turn golden brown. Enjoy them warm with tomato sauce for dipping. This recipe yields approximately 16 bites.
