Ingredients
- 1 cup (240 ml) shredded zucchini, drained well
- 1 clove garlic, grated fine
- 1/3 cup (80 g) breadcrumbs
- 1/4 cup (25 g) grated alternative cheese
- 1 large egg
- 2 tablespoons (30 ml) chopped fresh chives (or 1 tablespoon dried chives)
- 1 tablespoon (15 ml) chopped fresh parsley (or 1/2 tablespoon dried)
- 1 teaspoon (5 ml) chopped fresh basil (or 1/2 teaspoon dried)
- 1 teaspoon (5 ml) chopped fresh oregano (or 1/2 teaspoon dried)
- pinch of salt and pepper
- tomato sauce for dipping
Instructions
- Heat your oven to 400°F. Prepare a baking tray by lightly greasing it with olive oil or a non-stick spray. Set it aside for later use.
- Grate the zucchini using a box grater and place it on a clean cloth. Roll up the cloth and twist it to remove excess water.
- Using the fine side of the box grater, grate the garlic.
- In a medium-sized bowl, combine the drained zucchini, grated garlic, egg, breadcrumbs, alternative cheese, chives, parsley, basil, oregano, salt, and pepper. Mix thoroughly until everything is well incorporated.
- Take a tablespoon of the mixture and shape it into small balls using your hands. Arrange them on the prepared baking tray.
- Place the tray in the preheated oven and cook for 15-18 minutes, or until the bites are golden brown. Serve them warm with tomato sauce on the side. This recipe yields approximately 16 bites.
