Description

Discover the perfect recipe for zucchini garlic bites that are crispy on the outside and tender on the inside. Learn how to make this delicious appetizer today!

Ingredients

  • 1 cup (240 ml) shredded zucchini, drained well
  • 1 clove garlic, grated fine
  • 1/3 cup (80 g) breadcrumbs
  • 1/4 cup (25 g) grated alternative cheese
  • 1 large egg
  • 2 tablespoons (30 ml) chopped fresh chives (or 1 tablespoon dried chives)
  • 1 tablespoon (15 ml) chopped fresh parsley (or 1/2 tablespoon dried)
  • 1 teaspoon (5 ml) chopped fresh basil (or 1/2 teaspoon dried)
  • 1 teaspoon (5 ml) chopped fresh oregano (or 1/2 teaspoon dried)
  • pinch of salt and pepper
  • tomato sauce for dipping

Instructions

  1. Heat your oven to 400°F. Prepare a baking tray by lightly greasing it with olive oil or a non-stick spray. Set it aside for later use.
  2. Grate the zucchini using a box grater and place it on a clean cloth. Roll up the cloth and twist it to remove excess water.
  3. Using the fine side of the box grater, grate the garlic.
  4. In a medium-sized bowl, combine the drained zucchini, grated garlic, egg, breadcrumbs, alternative cheese, chives, parsley, basil, oregano, salt, and pepper. Mix thoroughly until everything is well incorporated.
  5. Take a tablespoon of the mixture and shape it into small balls using your hands. Arrange them on the prepared baking tray.
  6. Place the tray in the preheated oven and cook for 15-18 minutes, or until the bites are golden brown. Serve them warm with tomato sauce on the side. This recipe yields approximately 16 bites.

Notes

  • Drain the shredded zucchini thoroughly to avoid excess moisture in the bites.
  • Adjust salt and pepper seasoning to taste before shaping the mixture.
  • Opt for fresh herbs for a more vibrant flavor, but dried herbs are suitable if fresh ones are unavailable.
