Ingredients

  • 1 pound (454 g) (450 grams) boneless, skinless chicken breast
  • 2 tablespoon (30 ml) s (30 milliliters) olive oil
  • 2 medium zucchinis, sliced
  • 1 red bell pepper, diced
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon (5 ml) (5 grams) salt
  • 1/2 teaspoon (3 ml) (2.5 grams) black pepper
  • 1 teaspoon (5 ml) (2 grams) dried Italian seasoning
  • 1/2 cup (120 ml) (120 milliliters) chicken broth
  • 1/4 cup (60 ml) (25 grams) grated Parmesan cheese
  • 1 tablespoon (15 ml) (15 grams) chopped fresh parsley


Instructions

  1. Cut the chicken breast into bite-sized pieces.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  3. Add the chicken pieces to the skillet.
  4. Season the chicken with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
  5. Cook the chicken for 6-8 minutes until browned and cooked through.
  6. Remove the chicken from the skillet and set it aside.
  7. In the same skillet, add the remaining tablespoon of olive oil.
  8. Add the chopped onion and diced red bell pepper to the skillet.
  9. Sauté the vegetables for 3-4 minutes until they begin to soften.
  10. Add the minced garlic to the skillet and cook for 1 minute.
  11. Stir in the sliced zucchinis, remaining salt, and black pepper.
  12. Sprinkle the dried Italian seasoning over the vegetables.
  13. Cook the vegetables for 5-6 minutes until the zucchinis are tender.
  14. Return the cooked chicken to the skillet with the vegetables.
  15. Pour the chicken broth into the skillet and stir well.
  16. Simmer the mixture for 2-3 minutes until the broth reduces slightly.
  17. Sprinkle the grated Parmesan cheese over the skillet.
  18. Stir everything to combine and melt the cheese.
  19. Remove the skillet from heat and sprinkle with chopped fresh parsley.
