- 2 cloves garlic, minced
- 1 teaspoon (5 ml) (5 grams) salt
- 1/2 teaspoon (3 ml) (2.5 grams) black pepper
- 1 teaspoon (5 ml) (2 grams) dried Italian seasoning
- 1/2 cup (120 ml) (120 milliliters) chicken broth
- 1/4 cup (60 ml) (25 grams) grated Parmesan cheese
- 1 tablespoon (15 ml) (15 grams) chopped fresh parsley
Instructions
- Cut the chicken breast into bite-sized pieces.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the chicken pieces to the skillet.
- Season the chicken with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
- Cook the chicken for 6-8 minutes until browned and cooked through.
- Remove the chicken from the skillet and set it aside.
- In the same skillet, add the remaining tablespoon of olive oil.
- Add the chopped onion and diced red bell pepper to the skillet.
- Sauté the vegetables for 3-4 minutes until they begin to soften.
