Ingredients
- 2 medium zucchinis
- 1 tablespoon olive oil (15 ml)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup crumbled feta cheese (150 g)
- 2 large eggs
- 1/2 cup milk (120 ml)
- 1/4 cup chopped fresh parsley (15 g)
- 1/4 cup chopped fresh dill (15 g)
- 1/2 teaspoon salt (2.5 g)
- 1/4 teaspoon black pepper (1 g)
- 1/2 cup breadcrumbs (60 g)
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the zucchinis into thin rounds.
- Heat olive oil in a pan over medium heat.
- Add the chopped onion and sauté until translucent.
- Add minced garlic and sauté for an additional 1 minute.
- In a large bowl, whisk together eggs and milk.
- Stir in crumbled feta cheese, parsley, dill, salt, and pepper.
- Add the sautéed onion and garlic to the mixture.
- Gently fold in the sliced zucchini.
- Pour the mixture into a greased baking dish.
- Sprinkle breadcrumbs evenly over the top.
- Bake in the preheated oven for 30-35 minutes.
- Remove from oven when the top is golden brown.
- Allow to cool for 5-10 minutes before serving.
