Ingredients

  • 2 medium zucchinis
  • 1 tablespoon olive oil (15 ml)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup crumbled feta cheese (150 g)
  • 2 large eggs
  • 1/2 cup milk (120 ml)
  • 1/4 cup chopped fresh parsley (15 g)
  • 1/4 cup chopped fresh dill (15 g)
  • 1/2 teaspoon salt (2.5 g)
  • 1/4 teaspoon black pepper (1 g)
  • 1/2 cup breadcrumbs (60 g)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis into thin rounds.
  3. Heat olive oil in a pan over medium heat.
  4. Add the chopped onion and sauté until translucent.
  5. Add minced garlic and sauté for an additional 1 minute.
  6. In a large bowl, whisk together eggs and milk.
  7. Stir in crumbled feta cheese, parsley, dill, salt, and pepper.
  8. Add the sautéed onion and garlic to the mixture.
  9. Gently fold in the sliced zucchini.
  10. Pour the mixture into a greased baking dish.
  11. Sprinkle breadcrumbs evenly over the top.
  12. Bake in the preheated oven for 30-35 minutes.
  13. Remove from oven when the top is golden brown.
  14. Allow to cool for 5-10 minutes before serving.
