Description

Ingredients

  • 3 cup (720 ml) s zucchini finely shredded
  • 1 1/2 cup (360 ml) low moisture shredded moz zarella cheese
  • 1/3 cup (80 ml) coconut flour
  • 1 tsp (5 ml) baking powder
  • 2 large eggs
  • Everything bagel seasoning for topping


Instructions

  1. Set your oven to 400°F and prepare a large baking sheet with a silicone mat.
  2. Squeeze out the moisture from the zucchini in small portions using a cheesecloth. You should end up with 2 cups of zucchini.
  3. In a big mixing bowl, combine the zucchini with coconut flour, baking powder, and eggs. Stir until everything is well mixed.
  4. Place the cheese in a microwave-safe bowl and warm it in the microwave until completely melted, around 1 minute. Heat in 20-second bursts to avoid burning, stirring after each burst until smooth.
  5. Combine the zucchini mixture and melted cheese in a food processor and blend until the mixture is consistent. If preferred, mix by hand, though it will require more effort.
  6. Fill a 1/3 cup measuring cup with the batter. Turn the measuring cup upside down over the prepared baking sheet and shake gently until the batter releases while maintaining the cup’s shape.
  7. To form bagels, use a finger to poke a hole in the middle and gently expand and shape the hole. Use your hands to round off the edges and top, aiming for a cake donut size. Smooth the bagel’s surface as best as you can.
  8. Generously cover the surface of the bagels with everything bagel seasoning.
  9. Bake the bagels for approximately 22 to 28 minutes or until their tops are golden brown.
  10. Keep any leftover bagels in the fridge or freezer and reheat them in the oven or toaster oven when needed.
