Ingredients

  • 3 large Zucchinis (about 750g)
  • 2 tbsps Vegetable oil plus extra for garnish
  • 1 1/2 tsps Salt or to taste
  • 1/4 cup (60 ml) Tahini
  • 1/4 cup (60 ml) Lemon juice
  • 1 clove Garlic clove crushed
  • 1 tbsp (15 ml) Parsley plus extra for garnish
  • 1 tbsp (15 ml) Fresh mint leaves plus extra for garnish
  • 1 tbsp (15 ml) Toasted sesame seeds optional, for garnish


Instructions

  1. Leave the zucchini unpeeled and dice it into small pieces. Mix with vegetable oil and salt, then arrange on a baking sheet lined with parchment paper. Place in an oven preheated to 200°C (392°F) and bake until they turn golden, around 15-17 minutes. Allow to cool for 10 minutes.
  2. In a food processor, combine tahini, lemon juice, crushed garlic, parsley, mint, and a pinch of salt, blending for 30 seconds. Incorporate the roasted zucchini and process until mostly creamy with some bits remaining. Move to a serving dish, drizzle with vegetable oil, and garnish with fresh herbs and optional toasted sesame seeds.
