Ingredients
- 3 large Zucchinis (about 750g)
- 2 tbsps Vegetable oil plus extra for garnish
- 1 1/2 tsps Salt or to taste
- 1/4 cup (60 ml) Tahini
- 1/4 cup (60 ml) Lemon juice
- 1 clove Garlic clove crushed
- 1 tbsp (15 ml) Parsley plus extra for garnish
- 1 tbsp (15 ml) Fresh mint leaves plus extra for garnish
- 1 tbsp (15 ml) Toasted sesame seeds optional, for garnish
Instructions
- Leave the zucchini unpeeled and dice it into small pieces. Mix with vegetable oil and salt, then arrange on a baking sheet lined with parchment paper. Place in an oven preheated to 200°C (392°F) and bake until they turn golden, around 15-17 minutes. Allow to cool for 10 minutes.
- In a food processor, combine tahini, lemon juice, crushed garlic, parsley, mint, and a pinch of salt, blending for 30 seconds. Incorporate the roasted zucchini and process until mostly creamy with some bits remaining. Move to a serving dish, drizzle with vegetable oil, and garnish with fresh herbs and optional toasted sesame seeds.
