Ingredients

- – 8 ounces (227 g) crimini mushrooms, chopped
- – 1/2 cup (120 ml) vegetable oil
- – 8 cloves garlic, minced
- – salt and freshly ground black pepper, to taste
- – 1/4 teaspoon (1 ml) red pepper flakes
- – 1/2 cup (120 ml) freshly grated vegetarian-friendly cheese
Instructions
- Fill a large pot with water and bring it to a boil. Cook the pasta as per the package instructions until it reaches a firm texture.
- As the pasta cooks, warm a spacious nonstick skillet over medium-high heat. Pour in vegetable oil, followed by the minced garlic. Once the garlic sizzles, incorporate the shredded zucchini. Add salt, black pepper, and red pepper flakes to your liking; stir-fry for 3 minutes.
- Introduce the chopped mushrooms and continue to sauté for an additional 4 minutes.
- Combine the drained, hot pasta with the zucchini and mushroom mixture in the pan.
- Sprinkle the grated cheese over the pasta and stir well to blend.
