Ingredients

  • – 12 ounces (340 g) spaghetti (or pasta of your choice)
  • – 2 medium zucchini, shredded and all moisture pressed out
  • – 8 ounces (227 g) crimini mushrooms, chopped
  • – 1/2 cup (120 ml) vegetable oil
  • – 8 cloves garlic, minced
  • – salt and freshly ground black pepper, to taste
  • – 1/4 teaspoon (1 ml) red pepper flakes
  • – 1/2 cup (120 ml) freshly grated vegetarian-friendly cheese


Instructions

  1. Fill a large pot with water and bring it to a boil. Cook the pasta as per the package instructions until it reaches a firm texture.
  2. As the pasta cooks, warm a spacious nonstick skillet over medium-high heat. Pour in vegetable oil, followed by the minced garlic. Once the garlic sizzles, incorporate the shredded zucchini. Add salt, black pepper, and red pepper flakes to your liking; stir-fry for 3 minutes.
  3. Introduce the chopped mushrooms and continue to sauté for an additional 4 minutes.
  4. Combine the drained, hot pasta with the zucchini and mushroom mixture in the pan.
  5. Sprinkle the grated cheese over the pasta and stir well to blend.
