Ingredients

  • 2 1/4 cups (270g) flour
  • 1 tablespoon (15ml) baking powder
  • 1 teaspoon (5ml) sugar
  • 3/4 teaspoon (4ml) salt
  • 1/8 teaspoon (0.5ml) pepper
  • 1/2 cup (115g) vegetable oil, melted and slightly cooled
  • 1 cup (240ml) milk or buttermilk
  • 1 1/2 cups (170g) cheddar cheese, shredded
  • 3/4 cup (90g) zucchini, shredded
  • 1 tablespoon (15ml) green onion, sliced


Instructions

  1. Set your oven to 425°F and prepare a baking tray by covering it with parchment paper.
  2. Wrap the shredded zucchini in a cheesecloth or a clean tea towel and press out the excess moisture. Put it aside for later.
  3. Combine the flour, baking powder, sugar, and salt in a big mixing bowl.
  4. Blend the melted oil with the milk and then incorporate this mixture into the dry ingredients.
  5. Gently mix in the cheddar cheese, zucchini, and green onion until they are evenly distributed in the batter.
  6. Using a large cookie scoop or ice cream scoop, drop portions of the batter onto the prepared baking sheet, keeping about an inch of space between each biscuit. Aim for around 12 to 14 biscuits.
  7. Place in the oven and bake for 15 to 20 minutes, or until the tops start to become golden brown. Let them cool a little before serving. Optionally, you can brush them with some melted oil before serving.

Notes

  • Thoroughly squeeze excess moisture from zucchini to prevent soggy biscuits.
  • Avoid overmixing batter after adding cheese, zucchini, and green onion for a fluffy texture.
