A fluffy, delicious zero carb yogurt bread that is easy to make and perfect for various toppings.
Ingredients
- 6 large eggs
- ½ cup full-fat Greek yogurt (unsweetened, plain)
- 1 tablespoon baking powder (preferably aluminum-free)
- ¼ cup melted butter or coconut oil
- ¼ teaspoon salt
- ½ teaspoon xanthan gum or psyllium husk powder
- Optional: ½ cup finely ground almond flour
Instructions
- Preheat the oven to 350°F (175°C) and prepare a loaf pan by lining it with parchment paper or greasing it.
- Whisk together the eggs, Greek yogurt, and melted butter (or coconut oil) until smooth and creamy.
- Add the baking powder, salt, and xanthan gum or psyllium husk powder, mixing until well incorporated. If using, add almond flour.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Consider substituting Greek yogurt with a dairy-free option. Weighing the eggs may improve the results.
