Description

A fluffy, delicious zero carb yogurt bread that is easy to make and perfect for various toppings.


Ingredients

  • 6 large eggs
  • ½ cup full-fat Greek yogurt (unsweetened, plain)
  • 1 tablespoon baking powder (preferably aluminum-free)
  • ¼ cup melted butter or coconut oil
  • ¼ teaspoon salt
  • ½ teaspoon xanthan gum or psyllium husk powder
  • Optional: ½ cup finely ground almond flour


Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a loaf pan by lining it with parchment paper or greasing it.
  2. Whisk together the eggs, Greek yogurt, and melted butter (or coconut oil) until smooth and creamy.
  3. Add the baking powder, salt, and xanthan gum or psyllium husk powder, mixing until well incorporated. If using, add almond flour.
  4. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  5. Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Consider substituting Greek yogurt with a dairy-free option. Weighing the eggs may improve the results.
