A moist and flavorful olive oil cake infused with fresh citrus, perfect for winter gatherings.
Ingredients
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- Pinch of salt
- ¾ cup extra virgin olive oil
- ½ cup plain yogurt
- â…“ cup fresh orange juice
- 2 tablespoons orange zest
- 2 teaspoons vanilla extract
- 2 large eggs
- 1 cup sugar
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
- In a mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, and salt. Set aside.
- In another bowl, mix the wet ingredients: olive oil, yogurt, and sugar until smooth. Add orange juice, orange zest, and vanilla extract, whisking in the eggs one at a time.
- Gradually sprinkle the dry mixture into the wet mixture, stirring gently until just combined.
- Pour the batter into the prepared cake pan and spread evenly.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool before transferring to a wire rack.
Notes
For an extra citrus flavor, consider adding additional zest. Store in an airtight container for up to three days or refrigerate for about a week.
