Description

A moist and flavorful olive oil cake infused with fresh citrus, perfect for winter gatherings.


Ingredients

  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • Pinch of salt
  • ¾ cup extra virgin olive oil
  • ½ cup plain yogurt
  • â…“ cup fresh orange juice
  • 2 tablespoons orange zest
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1 cup sugar


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, mix the wet ingredients: olive oil, yogurt, and sugar until smooth. Add orange juice, orange zest, and vanilla extract, whisking in the eggs one at a time.
  4. Gradually sprinkle the dry mixture into the wet mixture, stirring gently until just combined.
  5. Pour the batter into the prepared cake pan and spread evenly.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool before transferring to a wire rack.

Notes
