Ingredients
- 3/4 c. all-purpose flour
- 3/4 c. white whole wheat flour
- 1/2 c. brown sugar
- 2 tsp (10 ml). baking powder
- 1 tsp (5 ml). cinnamon
- 1/2 tsp (3 ml). nutmeg
- 1/4 tsp (1 ml). allspice
- 1/4 tsp (1 ml). salt
- 6 tbsp (90 ml). butter cold and cut into pieces
- 1/2 c. milk the higher the fat content, the richer the flavor
- 1 egg
- 1 tsp (5 ml). vanilla extract
- 1 c. chopped apple
- 1 c. confectioner’s sugar
- 2 tbsp (30 ml). milk a higher percentage of fat works the best
- 1 tsp (5 ml). vanilla extract
Instructions
- Set your oven temperature to 400°F. Prepare a baking tray with a silicone mat suitable for high heat, or without one if preferred for easier cleaning.
- In a mixing bowl, combine the all-purpose flour, white whole wheat flour, brown sugar, baking powder, cinnamon, nutmeg, allspice, and salt. Incorporate the chilled, diced butter until the mixture has a crumbly texture.
- In another bowl, mix the milk, egg, and vanilla extract thoroughly. Integrate this liquid blend into the dry ingredients, stirring until just mixed. Gently fold in the apple pieces.
- Scoop out 1/4 cup portions of the batter and place them on the baking tray. For smaller fritters, use a heaping tablespoon of batter for each.
- Bake in the oven for 11 to 13 minutes until the bottoms are browned and the centers are set. For smaller fritters, start checking at 8 minutes. Take them out of the oven and switch to broil mode.
- While waiting for the broiler to heat, create the glaze by whisking together confectioner’s sugar, milk, and vanilla extract until smooth. Coat each fritter with a layer of glaze.
- Place the fritters under the broiler for 2 to 4 minutes, until the tops turn golden and the glaze starts to bubble.
- Carefully remove the baking tray from the oven and transfer the fritters to a cooling rack. Apply the remaining glaze to the fritters while they are still warm.
