A healthy twist on traditional pizza featuring cottage cheese for added protein and creaminess, this flatbread pizza is quick to prepare and a delight to savor.
Ingredients
- 1 cup cottage cheese
- 2 eggs
- 1/2 teaspoon garlic powder
- 1 teaspoon Italian herb mix
- Salt and black pepper (to taste)
- 2/3 cup pizza sauce
- 3.5 ounces grated cheese (Gouda, Edam, or mozzarella)
- 2 ounces pepperoni
Instructions
- Preheat your oven to 350°F (180°C).
- Combine the cottage cheese, eggs, garlic powder, salt, black pepper, and the Italian herb mix in a blender. Blend until smooth.
- Line a baking sheet with parchment paper. Pour the mixture onto the parchment-lined sheet and spread it into a thin circle.
- Bake for 30 minutes or until the flatbread has turned golden brown.
- Once golden, increase the oven temperature to 400°F (200°C).
- Spread the pizza sauce over the baked flatbread. Top it generously with grated cheese and place the pepperoni.
- Bake for an additional 8-10 minutes until the cheese melts and becomes bubbly.
