Description

A savory venison quesadilla with melty mozzarella and a creamy chipotle lime crema, perfect for casual dinners or gatherings.


Ingredients

  • 1 lb Ground Venison
  • ¼ cup Finely Diced Onion
  • 2 tbsp Minced Garlic
  • 2 tbsp Taco Seasoning (homemade or store-bought)
  • 8-10 Mozzarella Cheese Slices
  • 3-4 Large Tortillas
  • ¼ cup Sour Cream
  • ¼ cup Mayonnaise
  • ¼ cup Buttermilk
  • 1 Medium Lime (juiced)
  • 2 tbsp Chipotle Puree
  • Kosher Salt (to taste)


Instructions

  1. Prepare the chipotle lime crema by combining the sour cream, mayonnaise, buttermilk, lime juice, chipotle puree, and salt in a bowl. Mix well and refrigerate to chill.
  2. Mix the taco seasoning ingredients in a small bowl and set aside.
  3. Heat oil in a skillet over medium-high heat. Add the ground venison, cooking until browned thoroughly.
  4. Stir in the diced onion, minced garlic, and taco seasoning. Allow it to simmer until the venison is fully cooked.
  5. Heat a tortilla in the skillet. Layer mozzarella cheese on one side, add the cooked venison mixture, and any desired toppings.
  6. Fold the tortilla and cook until the cheese melts and the tortilla is golden brown.
  7. Repeat the process with the remaining tortillas, serving them warm alongside the chilled chipotle lime crema for dipping.
