Ingredients
- 400g (14 oz) rinsed and drained chickpeas
- 1 tbsp (15 ml) tahini paste
- 2 crushed garlic cloves
- juice of 1 lemon
- 4 tbsp (60 ml) olive oil
- 1 tbsp (15 ml) just-boiled water
- 1 tsp (5 ml) yeast extract
- sticks of carrot cucumber, pepper and sesame flatbreads to serve (see below)
- 200g (7 oz) self-raising flour
- 2 tbsp (30 ml) sesame seeds
- a pinch of salt
- a grind of black pepper
Instructions
- Place the chickpeas, tahini, and garlic into a blender and blend until the mixture is smooth. Incorporate the lemon juice, olive oil, hot water, and yeast extract. Blend once more until the texture is very smooth. Enjoy with carrot, cucumber, and pepper sticks alongside sesame flatbreads.
- For the sesame flatbreads, preheat the grill to a high setting and sprinkle a non-stick baking tray lightly with flour. In a large bowl, combine the self-raising flour, sesame seeds, a bit of salt, and a dash of black pepper. Gradually add the natural yogurt and milk or water, mixing thoroughly to create a soft dough.
- Separate the dough into four portions and flatten each into an oval shape about 5mm thick. Arrange them on the tray and grill each side for 3 minutes until they become puffed and golden. Optionally, brush with a touch of olive oil before serving.
Notes
- For a smoother hummus, gradually incorporate more olive oil while blending chickpeas, tahini, and garlic.
- Adjust the lemon juice amount to your taste preference for a tangier or milder hummus flavor.
