Ingredients

  • 1 cup rolled oats (90 g)
  • 1 large zucchini, grated
  • 1/2 cup all-purpose flour (60 g)
  • 1/4 cup nutritional yeast (20 g)
  • 1 teaspoon (5 ml) garlic powder
  • 1 teaspoon (5 ml) onion powder
  • 1/2 teaspoon (3 ml) salt
  • 1/2 teaspoon (3 ml) black pepper
  • 1/2 teaspoon (3 ml) paprika
  • 1 tablespoon olive oil (15 ml)
  • 1 tablespoon ground flaxseed (7 g)
  • 3 tablespoons water (45 ml)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. In a small bowl, combine the ground flaxseed with water and let it sit for 5 minutes to thicken.
  4. In a large bowl, mix the grated zucchini with the thickened flaxseed mixture.
  5. Add the rolled oats, all-purpose flour, and nutritional yeast to the zucchini mixture.
  6. Season with garlic powder, onion powder, salt, black pepper, and paprika.
  7. Stir in the olive oil until the mixture is well combined.
  8. Take a small portion of the mixture and shape it into a stick.
  9. Place the shaped sticks on the prepared baking sheet.
  10. Repeat until all the mixture is used up.
  11. Bake the sticks in the preheated oven for 20-25 minutes, or until golden brown.
  12. Allow the zucchini and oatmeal sticks to cool slightly before serving.
