Ingredients
- 1 cup rolled oats (90 g)
- 1 large zucchini, grated
- 1/2 cup all-purpose flour (60 g)
- 1/4 cup nutritional yeast (20 g)
- 1 teaspoon (5 ml) garlic powder
- 1 teaspoon (5 ml) onion powder
- 1/2 teaspoon (3 ml) salt
- 1/2 teaspoon (3 ml) black pepper
- 1/2 teaspoon (3 ml) paprika
- 1 tablespoon olive oil (15 ml)
- 1 tablespoon ground flaxseed (7 g)
- 3 tablespoons water (45 ml)
Instructions
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- In a small bowl, combine the ground flaxseed with water and let it sit for 5 minutes to thicken.
- In a large bowl, mix the grated zucchini with the thickened flaxseed mixture.
- Add the rolled oats, all-purpose flour, and nutritional yeast to the zucchini mixture.
- Season with garlic powder, onion powder, salt, black pepper, and paprika.
- Stir in the olive oil until the mixture is well combined.
- Take a small portion of the mixture and shape it into a stick.
- Place the shaped sticks on the prepared baking sheet.
- Repeat until all the mixture is used up.
- Bake the sticks in the preheated oven for 20-25 minutes, or until golden brown.
- Allow the zucchini and oatmeal sticks to cool slightly before serving.
