Description
A creamy and wholesome vegan spinach artichoke dip that’s perfect for gatherings and satisfying cravings without compromising health.
Ingredients
- 1 teaspoon oil
- 3 cloves garlic, chopped
- 10 ounces fresh baby spinach
- 16 ounces vegan cream cheese, room temperature
- â…“ cup vegan mayo
- 1 (14-ounce) can artichoke hearts, drained and chopped
- ¼ cup nutritional yeast (or vegan parmesan)
- ¼ teaspoon black pepper
- ¼ teaspoon salt
Instructions
- Preheat the oven to 400°F.
- Heat the oil in a large pan over medium heat. Add the chopped garlic and sauté until golden brown, about two minutes.
- Toss in the fresh spinach and cook until wilted. Remove from heat and set aside.
- In a baking dish, mix together the vegan cream cheese, vegan mayo, chopped artichoke hearts, nutritional yeast, sautéed spinach, salt, and black pepper until well combined.
- Bake the mixture in the preheated oven for 15-20 minutes, or until it bubbles.
- Serve warm with your choice of dippers.
Notes
Use room temperature vegan cream cheese for smooth mixing. Feel free to experiment with additional seasonings.
