Description

A creamy and wholesome vegan spinach artichoke dip that’s perfect for gatherings and satisfying cravings without compromising health.


Ingredients

  • 1 teaspoon oil
  • 3 cloves garlic, chopped
  • 10 ounces fresh baby spinach
  • 16 ounces vegan cream cheese, room temperature
  • â…“ cup vegan mayo
  • 1 (14-ounce) can artichoke hearts, drained and chopped
  • ¼ cup nutritional yeast (or vegan parmesan)
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt


Instructions

  1. Preheat the oven to 400°F.
  2. Heat the oil in a large pan over medium heat. Add the chopped garlic and sauté until golden brown, about two minutes.
  3. Toss in the fresh spinach and cook until wilted. Remove from heat and set aside.
  4. In a baking dish, mix together the vegan cream cheese, vegan mayo, chopped artichoke hearts, nutritional yeast, sautéed spinach, salt, and black pepper until well combined.
  5. Bake the mixture in the preheated oven for 15-20 minutes, or until it bubbles.
  6. Serve warm with your choice of dippers.

Notes

Use room temperature vegan cream cheese for smooth mixing. Feel free to experiment with additional seasonings.
