Ingredients

  • 6 slices bread of your choice
  • 1/2 English cucumber – peeled or not, then sliced
  • 1 cup (240 ml) vegan cream cheese – I used my easy homemade cream cheese, or use store-bought, see notes
  • 2 tbsp (30 ml) fresh chives – finely chopped
  • 1-2 tbsp (23 ml) fresh dill – finely chopped
  • 1 tbsp (15 ml) lemon juice
  • Salt and ground black pepper – to taste


Instructions

  1. Begin by either preparing the vegan cream cheese yourself or taking the store-bought version out of the refrigerator to let it soften slightly.
  2. Decide whether to peel the cucumber, then cut it into thin slices. Arrange the slices on a clean cloth, cover with another cloth, and gently press to remove excess moisture. Set them aside for later.
  3. Chop the dill and chives finely, ensuring they are free from any extra moisture.
  4. In a medium-sized bowl, blend the cream cheese with lemon juice, chopped chives, dill, and season with salt and black pepper according to your preference.
  5. Take two slices of bread and spread the cream cheese mixture evenly on each. Place some cucumber slices on one slice of bread (using one or two layers as desired), season with a bit more salt and pepper, and top with the second slice of bread.
  6. If desired, trim the crusts off the sandwiches, then cut them into squares or triangles. Enjoy your creation!
