A simple and comforting vegan banana bread that highlights the natural sweetness of ripe bananas and is perfect for any time of day.
Ingredients
- 3 ripe bananas, mashed
- â…“ cup almond milk (or any plant-based milk)
- ¼ cup olive oil (or another vegetable oil)
- ¾ cup sugar
- 1 tablespoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- A pinch of salt
Instructions
- Preheat the oven to 350°F (or 180°C). Prepare your loaf pan by lining it with parchment paper.
- Mash the 3 ripe bananas using a fork until smooth.
- Stir in almond milk, olive oil, sugar, and vanilla extract until the mixture is well combined.
- Sift in all-purpose flour, baking powder, baking soda, and a pinch of salt. Stir until just mixed; lumps are fine.
- Pour the batter into your prepared loaf pan.
- Bake for about 40 to 50 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for approximately 15 minutes, then remove and let cool completely on a wire rack for at least an hour.
- Slice the bread and enjoy.
Notes
Consider adding chopped nuts or dairy-free chocolate chips for extra flavor. Use frozen ripe bananas if needed.
