Description

A simple and comforting vegan banana bread that highlights the natural sweetness of ripe bananas and is perfect for any time of day.


Ingredients

  • 3 ripe bananas, mashed
  • â…“ cup almond milk (or any plant-based milk)
  • ¼ cup olive oil (or another vegetable oil)
  • ¾ cup sugar
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • A pinch of salt


Instructions

  1. Preheat the oven to 350°F (or 180°C). Prepare your loaf pan by lining it with parchment paper.
  2. Mash the 3 ripe bananas using a fork until smooth.
  3. Stir in almond milk, olive oil, sugar, and vanilla extract until the mixture is well combined.
  4. Sift in all-purpose flour, baking powder, baking soda, and a pinch of salt. Stir until just mixed; lumps are fine.
  5. Pour the batter into your prepared loaf pan.
  6. Bake for about 40 to 50 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for approximately 15 minutes, then remove and let cool completely on a wire rack for at least an hour.
  8. Slice the bread and enjoy.

Notes

Consider adding chopped nuts or dairy-free chocolate chips for extra flavor. Use frozen ripe bananas if needed.
