Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed (425 g)
- 1/2 cup breadcrumbs (60 g)
- 1/4 cup all-purpose flour (30 g)
- 1/4 cup finely chopped fresh parsley (15 g)
- 1/4 cup finely chopped red onion (40 g)
- 2 cloves garlic, minced
- 1 large egg
- 2 tablespoons lemon juice (30 ml)
- 1 teaspoon lemon zest
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (30 ml)
- Yogurt Sauce:
- 1 cup plain Greek yogurt (245 g)
- 2 tablespoons lemon juice (30 ml)
- 1 tablespoon olive oil (15 ml)
- 1 tablespoon finely chopped fresh dill (5 g)
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, mash the chickpeas with a fork until mostly smooth.
- Add breadcrumbs, flour, parsley, red onion, minced garlic, egg, lemon juice, lemon zest, cumin, coriander, salt, and black pepper to the mashed chickpeas.
- Mix until well combined and the mixture holds together.
- Form the mixture into small patties, about 2 inches wide.
- Heat olive oil in a large skillet over medium heat.
- Place the patties in the skillet, cooking in batches if necessary.
- Cook each side for 3-4 minutes, or until golden brown.
- Remove patties from skillet and drain on paper towels.
- In a small bowl, combine Greek yogurt, lemon juice, olive oil, dill, minced garlic, salt, and black pepper.
- Stir the yogurt sauce until smooth and well combined.
- Serve the chickpea patties warm with the yogurt sauce on the side.
