Ingredients
- 6 strips beef bacon (or turkey bacon), cut into small pieces
- 3 tablespoons (45 ml) vegetable oil
- 1 medium yellow onion, chopped (about 1.5 cups/200g)
- 3 large garlic cloves, minced
- 1/3 cup all-purpose flour (42g)
- 2 1/2 lbs gold potatoes, peeled and diced into pieces no larger than 1″ (1.15kg)
- 4 cups chicken broth (945ml)
- 2 cups milk (475ml)
- 3/4 cup coconut cream (155ml)
- 1 1/2 teaspoons (8 ml) salt
- 1 teaspoon (5 ml) ground pepper
- 1/4 – 1/2 teaspoon (3 ml) ancho chili powder
- 3/4 cups dairy-free sour cream (160g)
- Shredded dairy-free cheddar cheese, chives, and additional dairy-free sour cream and beef bacon for topping optional
Instructions
- Put the bacon pieces in a large Dutch oven or soup pot on medium heat and cook until they become crispy and browned.
- Take out the bacon pieces and save them for later, leaving the fat in the pot.
- Add vegetable oil and the chopped onion, cooking over medium heat until the onions become soft (3-5 minutes).
- Incorporate the minced garlic and cook until its aroma is released (around 30 seconds).
- Sprinkle the flour over the mixture in the pot and stir until you achieve a smooth consistency (use a whisk if necessary).
- Introduce the diced potatoes to the pot along with chicken broth, milk, coconut cream, salt, pepper, and ancho chili powder. Mix thoroughly.
- Bring the mixture to a boil and cook until the potatoes are tender enough to be easily pierced with a fork (approximately 10 minutes).
- Lower the heat to a simmer and carefully remove about half of the soup to a blender (be cautious, as it’s hot!) and blend until smooth. Alternatively, you can use an immersion blender.
- Pour the blended soup back into the pot and incorporate the dairy-free sour cream and the reserved bacon pieces, mixing well.
- Let the soup simmer gently for 15 minutes before serving.
- Garnish with extra sour cream, bacon, shredded dairy-free cheddar cheese, or chives as desired. Enjoy!

- To make this recipe healthier, you can use turkey bacon instead of beef bacon.
- For a creamier texture, try using full-fat coconut cream instead of light coconut cream.
