Ingredients
- 1/2 cup (120 ml) finely grated cucumber
- 1 cup (240 ml) thick whole milk Greek yogurt
- 1 tablespoon (15 ml) fresh lemon juice
- 1/2 tablespoon (8 ml) extra-virgin olive oil
- 1 garlic clove, grated
- 1/4 teaspoon (1 ml) sea salt
- 1 tablespoon (15 ml) chopped fresh dill
- 1 tablespoon (15 ml) chopped fresh mint, optional
Instructions
- Wrap the cucumber in a cloth and carefully press to remove some of the extra moisture.
- In a mixing bowl, blend together the cucumber, yogurt, lemon juice, olive oil, garlic, salt, dill, and mint, if desired. Refrigerate until it’s time to serve.
