  • 1/2 cup (120 ml) finely grated cucumber
  • 1 cup (240 ml) thick whole milk Greek yogurt
  • 1 tablespoon (15 ml) fresh lemon juice
  • 1/2 tablespoon (8 ml) extra-virgin olive oil
  • 1 garlic clove, grated
  • 1/4 teaspoon (1 ml) sea salt
  • 1 tablespoon (15 ml) chopped fresh dill
  • 1 tablespoon (15 ml) chopped fresh mint, optional


Instructions

  1. Wrap the cucumber in a cloth and carefully press to remove some of the extra moisture.
