Ingredients
- 1 delicata squash, halved lengthwise and seeded
- 2 teaspoons olive oil (10 ml)
- 1 tablespoon olive oil (15 ml)
- 2 beef sausages, casings removed
- 60 g finely chopped celery
- 60 g finely chopped onion
- 2 cloves garlic, minced
- 1/4 teaspoon (1 ml) dried sage
- 1/4 teaspoon (1 ml) dried rosemary
- 1/4 teaspoon (1 ml) dried thyme
- 60 g cooked wild rice
- 30 g coarsely chopped dried cherries
- 30 g chopped fresh parsley
- 30 g grated non-alcoholic cheese
Instructions
- Set your oven to 400°F (200°C) and prepare a baking sheet by lining it with foil or parchment paper.
- Use 2 teaspoons of oil to coat the inner sides of the squash halves. Arrange them face down on the prepared baking sheet.
- Place in the hot oven and cook until tender, about 20 to 25 minutes.
- In a medium pan over medium-high heat, warm 1 tablespoon of oil. Add the beef sausage, breaking it into small pieces, and cook until it browns, taking about 2 to 3 minutes.
- Lower the heat to medium and mix in the celery, onion, garlic, sage, rosemary, and thyme. Continue cooking until the vegetables become soft, approximately 4 to 5 minutes.
- Mix in the rice, cherries, and parsley, stirring until the mixture is heated through, around 1 to 2 minutes.
- Flip the squash halves so the cut side is facing up. Fill them with the sausage mixture and sprinkle the non-alcoholic cheese on top.
- Place them back in the oven and bake until the cheese has melted, for about 2 to 3 minutes.
Notes
- Enhance the flavor by seasoning the sausage mixture with salt and pepper before filling the squash.
- Add toasted nuts or breadcrumbs on top of the stuffed squash for a crunchy texture before baking.
