Ingredients

  • Sliced turkey breast, 8 ounces (227 g) (227 grams)
  • Fresh spinach, 1 cup (240 ml) (30 grams)
  • Beef salami, 4 slices
  • Whole grain bread, 4 slices
  • Vegetable oil, 1 tablespoon (15 ml) (15 milliliters)
  • Spicy brown mustard, 2 tablespoons (30 ml) (30 grams)

Instructions

  1. Preheat a panini press or a large skillet over medium heat.
  2. Spread 1 tablespoon of Dijon mustard evenly on each slice of whole grain bread.
  3. Layer 2 ounces of sliced turkey breast on two slices of the bread.
  4. Place 1/2 cup of fresh spinach evenly over the turkey on each bread slice.
  5. Arrange thin slices of Granny Smith apple on top of the spinach.
  6. Lay 2 slices of provolone cheese over the apples on each sandwich.
  7. Top with the remaining bread slices, mustard side down.
  8. Brush the outside of each sandwich with olive oil.
  9. Place the sandwiches in the panini press or skillet.
  10. Cook the sandwiches for 3-5 minutes, or until the cheese is melted and the bread is golden brown.
  11. Remove from heat and let the paninis rest for 1 minute before slicing and serving.

Notes

  • Use lean turkey breast to reduce the sandwich’s fat content.
  • Swap beef salami for a lower sodium option like turkey or chicken deli meat.
  • Choose whole grain bread for added fiber and nutrients.
