Ingredients

  • 1 pound (450 g) ground beef
  • 1 tablespoon (15 ml) vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon (5 g) dried oregano
  • 1 teaspoon (5 g) dried basil
  • 1/2 teaspoon (2.5 g) salt
  • 1/4 teaspoon (1.25 g) black pepper
  • 1 can (15 ounces / 425 g) white beans, drained and rinsed
  • 4 cups (100 g) kale, chopped
  • 1 can (14.5 ounces / 411 g) diced tomatoes, undrained
  • 1/2 cup (120 ml) beef broth
  • 1/4 cup (25 g) grated cheddar cheese


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and cook until softened, about 3-4 minutes.
  3. Stir in minced garlic and cook for another 30 seconds until fragrant.
  4. Add ground turkey to the skillet and cook until browned, breaking it apart with a spoon.
  5. Season the turkey with dried oregano, dried basil, salt, and black pepper.
  6. Stir in the drained and rinsed white beans.
  7. Add chopped kale to the skillet and cook until wilted, about 2-3 minutes.
  8. Pour in the diced tomatoes with their juices and chicken broth.
  9. Stir the mixture well and bring to a simmer.
  10. Reduce heat to low and let it cook for 10 minutes, stirring occasionally.
  11. Sprinkle grated Parmesan cheese over the top before serving.
