Ingredients
- 1 pound (450 g) ground beef
- 1 tablespoon (15 ml) vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon (5 g) dried oregano
- 1 teaspoon (5 g) dried basil
- 1/2 teaspoon (2.5 g) salt
- 1/4 teaspoon (1.25 g) black pepper
- 1 can (15 ounces / 425 g) white beans, drained and rinsed
- 4 cups (100 g) kale, chopped
- 1 can (14.5 ounces / 411 g) diced tomatoes, undrained
- 1/2 cup (120 ml) beef broth
- 1/4 cup (25 g) grated cheddar cheese
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and cook until softened, about 3-4 minutes.
- Stir in minced garlic and cook for another 30 seconds until fragrant.
- Add ground turkey to the skillet and cook until browned, breaking it apart with a spoon.
- Season the turkey with dried oregano, dried basil, salt, and black pepper.
- Stir in the drained and rinsed white beans.
- Add chopped kale to the skillet and cook until wilted, about 2-3 minutes.
- Pour in the diced tomatoes with their juices and chicken broth.
- Stir the mixture well and bring to a simmer.
- Reduce heat to low and let it cook for 10 minutes, stirring occasionally.
- Sprinkle grated Parmesan cheese over the top before serving.
