Ingredients

  • – 2 lbs (900 g) lean ground beef
  • – 1/2 teaspoon (2.5 ml) vegetable oil
  • – 1 small onion, chopped
  • – 3 garlic cloves, minced
  • – 1 teaspoon (5 ml) chili powder, to taste
  • – 2 bay leaves
  • – 1 1/2 tbsp (22.5 ml) cumin
  • – 1 tsp (5 ml) oregano
  • – 2 cans (2 x 425 g) white northern or navy beans, rinsed and drained
  • – 15 oz (425 g) can pumpkin puree, or homemade
  • – 4.5 oz (128 g) chopped green chile
  • – 2 cups (480 ml) low sodium chicken broth, check labels for GF
  • – kosher salt and pepper to taste
  • – chopped cilantro, red onion, or chives for topping
  • – Greek yogurt or low-fat sour cream for topping, optional


Instructions

  1. Warm a large pan over high heat and lightly coat with olive oil spray.
  2. Add the ground beef and cook, breaking it apart until it turns white, approximately 5 minutes, then move it to the slow cooker.
  3. Pour vegetable oil into the pan, then add chopped onion and minced garlic, sauté for 3 to 4 minutes; incorporate cumin and sauté for an additional minute. Move this to the slow cooker.
  4. Introduce the white beans, pumpkin puree, chopped green chiles, chicken broth, chili powder, oregano, and bay leaves. Cover and let it cook on high for 4 hours or on low for 8 hours.
  5. Take out the bay leaves and adjust the seasoning to your liking before serving. Enjoy your meal!
  6. Activate the sauté function and lightly spray with olive oil. Add the ground beef and cook, breaking it apart until it turns white, approximately 5 minutes, then set it aside.
