Description

Discover how to make delicious Turkey and Spinach Stuffed Bell Peppers with this easy recipe! Learn the step-by-step process and enjoy a healthy meal.

Ingredients

  • 8 bell peppers, any color or mixed
  • olive oil cooking spray
  • 1 medium onion, chopped and divided
  • 1 tsp (5 ml). garlic, minced
  • salt and pepper to taste
  • 1 tsp (5 ml). chili powder
  • 1 Tbsp (15 ml). cumin
  • 16-20 oz. lean ground beef (450-567 g)
  • 16 oz. chunky salsa (454 g)
  • 5 oz. bag baby spinach, roughly chopped (142 g)
  • 1 cup cooked brown rice (240 ml)
  • 1 cup shredded cheese (like mozzarella or cheddar) (113 g)
  • 2 large avocados, sliced
  • 1 cup (240 ml) plain yogurt
  • 1 tsp (5 ml). lemon juice

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the peppers in half from top to bottom and remove the seeds and membranes. Arrange them in a large glass baking dish lined with foil and lightly coat with olive oil spray. Cover with foil and bake for 20 minutes.
  3. While the peppers are baking, heat some oil in a Dutch oven over medium-high heat. Sauté the onion (reserving 1 teaspoon for the yogurt), garlic, salt, pepper, chili powder, and cumin until the onion becomes tender, about 3-5 minutes.
  4. Add the ground beef to the onion mixture, breaking it apart as it cooks, for about 5 minutes. Stir in the salsa and half of the chopped spinach. Allow the spinach to wilt before adding the remaining spinach.
  5. Take the mixture off the heat and mix in the cooked rice.
  6. Gently stuff the prepared peppers with the beef mixture, cover with foil, and return to the oven for 20-25 minutes.
  7. To make the yogurt sauce, mix the reserved chopped onion with the lemon juice.
  8. Remove the foil from the peppers, sprinkle with cheese, and bake uncovered for another 5-7 minutes.
  9. Serve with slices of avocado and a spoonful of the yogurt sauce on top.

Notes

  • Consider using ground turkey or chicken instead of beef for a healthier option.
  • Swap the ground beef for cooked lentils or black beans for a vegetarian alternative.
  • Experiment with feta or pepper jack cheese for a unique twist on this dish.
