Ingredients
- 8 bell peppers, any color or mixed
- olive oil cooking spray
- 1 medium onion, chopped and divided
- 1 tsp (5 ml). garlic, minced
- salt and pepper to taste
- 1 tsp (5 ml). chili powder
- 1 Tbsp (15 ml). cumin
- 16-20 oz. lean ground beef (450-567 g)
- 16 oz. chunky salsa (454 g)
- 5 oz. bag baby spinach, roughly chopped (142 g)
- 1 cup cooked brown rice (240 ml)
- 1 cup shredded cheese (like mozzarella or cheddar) (113 g)
- 2 large avocados, sliced
- 1 cup (240 ml) plain yogurt
- 1 tsp (5 ml). lemon juice
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the peppers in half from top to bottom and remove the seeds and membranes. Arrange them in a large glass baking dish lined with foil and lightly coat with olive oil spray. Cover with foil and bake for 20 minutes.
- While the peppers are baking, heat some oil in a Dutch oven over medium-high heat. Sauté the onion (reserving 1 teaspoon for the yogurt), garlic, salt, pepper, chili powder, and cumin until the onion becomes tender, about 3-5 minutes.
- Add the ground beef to the onion mixture, breaking it apart as it cooks, for about 5 minutes. Stir in the salsa and half of the chopped spinach. Allow the spinach to wilt before adding the remaining spinach.
- Take the mixture off the heat and mix in the cooked rice.
- Gently stuff the prepared peppers with the beef mixture, cover with foil, and return to the oven for 20-25 minutes.
- To make the yogurt sauce, mix the reserved chopped onion with the lemon juice.
- Remove the foil from the peppers, sprinkle with cheese, and bake uncovered for another 5-7 minutes.
- Serve with slices of avocado and a spoonful of the yogurt sauce on top.
