Ingredients

  • 1 pound (454 g) ground beef (450 grams)
  • 2 cups (480 ml) fresh spinach (60 grams)
  • 3 cups (720 ml) pumpkin puree (680 grams)
  • 9 lasagna noodles
  • 1 cup (240 ml) ricotta cheese (250 grams)
  • 2 cups (480 ml) shredded mozzarella cheese (200 grams)
  • 1 cup (240 ml) grated Parmesan cheese (100 grams)
  • 1 egg
  • 1 teaspoon (5 ml) salt (5 grams)
  • 1 teaspoon (5 ml) black pepper (2 grams)
  • 1 teaspoon (5 ml) garlic powder (2 grams)
  • 1 teaspoon (5 ml) dried oregano (1 gram)
  • 1 teaspoon (5 ml) dried basil (1 gram)
  • 2 cups (480 ml) tomato sauce (480 milliliters)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Boil a pot of water and cook the lasagna noodles until al dente. Drain and set aside.
  3. In a large skillet, cook the ground turkey over medium heat until browned.
  4. Add salt, black pepper, and garlic powder to the turkey. Stir well.
  5. Add fresh spinach to the turkey and cook until wilted. Remove from heat.
  6. In a bowl, combine pumpkin puree, ricotta cheese, egg, oregano, and basil. Mix well.
  7. Spread a thin layer of marinara sauce on the bottom of a 9×13 inch (23×33 cm) baking dish.
  8. Place three lasagna noodles over the sauce.
  9. Spread half of the pumpkin mixture over the noodles.
  10. Layer half of the turkey and spinach mixture over the pumpkin layer.
  11. Sprinkle one cup of mozzarella cheese over the turkey layer.
  12. Add a layer of marinara sauce over the cheese.
  13. Repeat the layers: noodles, pumpkin mixture, turkey and spinach, mozzarella, and marinara sauce.
  14. Top with the final three noodles and remaining marinara sauce.
  15. Sprinkle Parmesan cheese evenly over the top.
  16. Cover the dish with aluminum foil.
  17. Bake in the preheated oven for 25 minutes.
  18. Remove the foil and bake for an additional 15 minutes until the cheese is golden and bubbly.
  19. Let the lasagna rest for 10 minutes before slicing and serving.
