  • – 1 butternut squash, about 3 cups (720 g) cubed
  • – 1/2 cup (120 ml) vegetable broth
  • – 1 tbsp (15 ml) olive oil
  • – 1 small white onion, diced
  • – 2 cloves garlic, minced or pressed
  • – 1 red bell pepper, chopped
  • – salt and pepper, to taste
  • – 1 tsp (5 ml) smoked paprika
  • – 3/4 cup (180 ml) shredded cheese (use a non-alcoholic variety)
  • – fresh cilantro and parsley


Instructions

  1. Warm the olive oil in a cast iron skillet. Introduce the ground beef, diced onion, minced garlic, and chopped red bell pepper, cooking until the meat is browned. Add salt, pepper, and smoked paprika for seasoning.
  2. Incorporate the cubed butternut squash along with the vegetable broth. Stir to ensure the squash is mostly covered by the broth. Place a lid on the skillet and reduce the heat to medium-low, allowing it to cook for around 12 minutes or until the squash is tender.
  3. Take the skillet off the stove and sprinkle the shredded cheese on top. Place in an oven preheated to 400°F and bake for approximately 5 minutes, or until the cheese is melted.
