- – 1 butternut squash, about 3 cups (720 g) cubed
- – 1/2 cup (120 ml) vegetable broth

- – 2 cloves garlic, minced or pressed
- – 1 red bell pepper, chopped
- – salt and pepper, to taste
- – 1 tsp (5 ml) smoked paprika
- – 3/4 cup (180 ml) shredded cheese (use a non-alcoholic variety)
- – fresh cilantro and parsley
Instructions
- Warm the olive oil in a cast iron skillet. Introduce the ground beef, diced onion, minced garlic, and chopped red bell pepper, cooking until the meat is browned. Add salt, pepper, and smoked paprika for seasoning.
- Incorporate the cubed butternut squash along with the vegetable broth. Stir to ensure the squash is mostly covered by the broth. Place a lid on the skillet and reduce the heat to medium-low, allowing it to cook for around 12 minutes or until the squash is tender.
- Take the skillet off the stove and sprinkle the shredded cheese on top. Place in an oven preheated to 400°F and bake for approximately 5 minutes, or until the cheese is melted.
- Finish by topping with fresh cilantro or parsley before serving.
