Ingredients
- 1 large cucumber (about 300 g)
- 1 can (5 oz) tuna, drained (about 142 g)
- 2 tablespoons mayonnaise (about 30 ml)
- 1 tablespoon plain yogurt (about 15 ml)
- 1 tablespoon lemon juice (about 15 ml)
- 1 tablespoon chopped fresh dill (about 4 g)
- 1 tablespoon chopped fresh parsley (about 4 g)
- 1/4 cup finely chopped celery (about 30 g)
- 1/4 cup finely chopped red onion (about 40 g)
- Salt, to taste
- Black pepper, to taste
Instructions
- Wash the cucumber thoroughly under running water.
- Cut the cucumber in half lengthwise.
- Use a spoon to scoop out the seeds, creating a hollow center.
- In a medium bowl, add the drained tuna.
- Add mayonnaise and plain yogurt to the bowl.
- Pour in the lemon juice.
- Add the chopped fresh dill and parsley.
- Mix in the finely chopped celery and red onion.
- Season with salt and black pepper to taste.
- Stir the mixture until all ingredients are well combined.
- Spoon the tuna salad mixture into the hollowed centers of the cucumber halves.
- Cut the stuffed cucumbers into bite-sized pieces for serving.
