Description

Ingredients

  • 8 oz rice noodles
  • 1 lb chicken breast, sliced
  • 1 can (14 oz) coconut milk
  • 2 tbsp red curry paste
  • 2 tbsp lime juice
  • 2 tbsp vegetable oil
  • Fresh cilantro, for garnish
  • Salt, to taste


Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large pan, heat the vegetable oil over medium heat.
  3. Add the sliced chicken and cook until no longer pink.
  4. Stir in the red curry paste and cook for an additional minute.
  5. Pour in the coconut milk and bring to a simmer.
  6. Add the cooked noodles and lime juice to the pan, tossing to combine.
