Ingredients

  • – 2 tablespoons (30 ml) avocado oil or vegetable oil
  • – 1 onion, chopped
  • – 2-3 Thai bird chilies, slit but keep intact
  • – 1 pound (450 g) ground beef
  • – 3 garlic cloves, minced
  • – 1 inch-knob ginger, minced
  • – 1/2 teaspoon (3 ml) turmeric
  • – 1/2 teaspoon (3 ml) cumin
  • – 1/4 teaspoon (1 ml) salt
  • – 1/4 teaspoon (1 ml) pepper
  • – 1 tablespoon (15 ml) red curry paste
  • – 1 medium broccoli head, chopped into florets
  • – 1 cup (240 ml) tomato sauce
  • – 2 tablespoons (30 ml) soy sauce
  • – 1 giant handful of Thai basil
  • – 2 teaspoons (10 ml) fresh lime juice


Instructions

  1. Warm up a pan or wok on medium heat and pour in the oil, followed by the chopped onion and slit Thai chilies.
  2. When the onion starts to turn golden, incorporate the minced garlic, ginger, turmeric, cumin, salt, black pepper, and ground beef. Continue cooking until the beef loses its pink color.
  3. Mix in the red curry paste, then toss in the broccoli florets. Let it cook briefly before adding the tomato sauce, soy sauce, and Thai basil.
  4. Let everything simmer gently over low heat for approximately 10-15 minutes, until the sauce begins to thicken.
  5. Pour in the fresh lime juice, then it’s ready to serve.
