Description

A delightful blend of fresh flavors, these Thai Chicken Lettuce Wraps combine savory ground chicken with crunchy veggies, wrapped in crisp lettuce for a healthy meal.


Ingredients

  • 1 tablespoon sesame oil
  • ¼ cup yellow or white onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh minced ginger
  • 10 oz ground chicken
  • ¼ cup low-sodium Tamari
  • 2 tablespoons Thai sweet red chili sauce
  • Juice of 1 lime
  • 1 teaspoon maple syrup
  • â…“ cup cashews, chopped
  • ¼ cup scallions, chopped
  • ¼ cup cilantro, chopped
  • ¼-½ cup carrots, shredded
  • Sesame seeds for topping
  • 1 head butter lettuce, leaves removed


Instructions

  1. Heat a pan over medium-high heat and add the sesame oil.
  2. Once the oil is hot, add in the diced onions and cook for 2-3 minutes until they begin to brown.
  3. Incorporate the minced garlic and ginger, cooking for an additional 2 minutes.
  4. Add the ground chicken to the pan and break it up while mixing it with the aromatics.
  5. Season with salt and pepper, and cook for about 3-4 minutes until golden.
  6. Mix the Tamari, Thai sweet chili sauce, lime juice, and maple syrup in a small bowl.
  7. Sprinkle the chopped cashews over the chicken and pour the sauce over it.
  8. Toss to combine and reduce heat to low, cooking for an additional 2 minutes.
  9. Remove from heat and stir in the shredded carrots, scallions, and cilantro.
  10. Take a butter lettuce leaf and fill it with a spoonful of the chicken mixture. Top with sesame seeds before enjoying.

Notes

Serve with additional sauces for customization. Store leftovers in an airtight container for up to 3 days.
