A delightful blend of fresh flavors, these Thai Chicken Lettuce Wraps combine savory ground chicken with crunchy veggies, wrapped in crisp lettuce for a healthy meal.
Ingredients
- 1 tablespoon sesame oil
- ¼ cup yellow or white onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh minced ginger
- 10 oz ground chicken
- ¼ cup low-sodium Tamari
- 2 tablespoons Thai sweet red chili sauce
- Juice of 1 lime
- 1 teaspoon maple syrup
- â…“ cup cashews, chopped
- ¼ cup scallions, chopped
- ¼ cup cilantro, chopped
- ¼-½ cup carrots, shredded
- Sesame seeds for topping
- 1 head butter lettuce, leaves removed
Instructions
- Heat a pan over medium-high heat and add the sesame oil.
- Once the oil is hot, add in the diced onions and cook for 2-3 minutes until they begin to brown.
- Incorporate the minced garlic and ginger, cooking for an additional 2 minutes.
- Add the ground chicken to the pan and break it up while mixing it with the aromatics.
- Season with salt and pepper, and cook for about 3-4 minutes until golden.
- Mix the Tamari, Thai sweet chili sauce, lime juice, and maple syrup in a small bowl.
- Sprinkle the chopped cashews over the chicken and pour the sauce over it.
- Toss to combine and reduce heat to low, cooking for an additional 2 minutes.
- Remove from heat and stir in the shredded carrots, scallions, and cilantro.
- Take a butter lettuce leaf and fill it with a spoonful of the chicken mixture. Top with sesame seeds before enjoying.
Notes
Serve with additional sauces for customization. Store leftovers in an airtight container for up to 3 days.
