Description

Delicious bell peppers stuffed with seasoned ground beef, beans, rice, and cheese, combining the essence of tacos with healthy ingredients.


Ingredients

  • 6 bell peppers
  • 1 onion, diced
  • 1 lb lean ground beef
  • 14.5 oz can diced tomatoes
  • 18 oz can black beans, drained and rinsed
  • 15 oz can corn, drained and rinsed
  • 2 cups cooked brown rice
  • 1 1/2 cups shredded cheddar jack cheese
  • 1 taco seasoning packet
  • 2 tsp garlic powder
  • 1 tsp chili powder
  • Salt and black pepper to taste
  • Olive oil


Instructions

  1. Preheat the oven to 350 degrees F.
  2. Wash and halve the bell peppers, removing seeds, and place them in a baking dish. Drizzle with olive oil and bake for 5 minutes.
  3. In a skillet over medium heat, sauté diced onion with olive oil, garlic powder, chili powder, salt, and pepper until the onion becomes soft.
  4. Add the ground beef to the skillet and cook until browned.
  5. Mix in the diced tomatoes, black beans, corn, brown rice, and taco seasoning. Adjust salt and pepper to taste.
  6. Stuff the halved peppers with the filling and cover the baking dish with foil.
  7. Bake for 10 minutes, then remove the foil and sprinkle cheese on top.
  8. Bake uncovered for an additional 15 minutes or until the cheese melts.

Notes

Feel free to customize with different beans or grains. Substituting quinoa for brown rice or using ground turkey/chicken can add variations.
