Description

A comforting and versatile taco soup brimming with spice and flavor, perfect for gatherings and weeknight meals.


Ingredients

  • 1 lb ground beef or turkey
  • 1 onion, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (15 oz) tomato sauce
  • 1 packet taco seasoning
  • 2 cups chicken or beef broth
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions, avocado


Instructions

  1. In a large pot over medium heat, brown the ground meat alongside the chopped onion for 5-7 minutes. Drain excess fat.
  2. Add the drained and rinsed black beans, kidney beans, corn, diced tomatoes with juices, tomato sauce, and taco seasoning. Stir well.
  3. Pour in the chicken or beef broth and stir again, bringing the mixture to a simmer.
  4. Allow to cook for 20-30 minutes, stirring occasionally. Adjust seasoning with salt and pepper before serving.
  5. Serve hot, topped with optional garnishes like cheese, sour cream, and avocado.

Notes

For a vegetarian version, replace the meat with additional beans or lentils. Customize toppings to suit your preferences.
