A comforting and versatile taco soup brimming with spice and flavor, perfect for gatherings and weeknight meals.
Ingredients
- 1 lb ground beef or turkey
- 1 onion, chopped
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 can (15 oz) tomato sauce
- 1 packet taco seasoning
- 2 cups chicken or beef broth
- Salt and pepper, to taste
- Optional toppings: shredded cheese, sour cream, chopped green onions, avocado
Instructions
- In a large pot over medium heat, brown the ground meat alongside the chopped onion for 5-7 minutes. Drain excess fat.
- Add the drained and rinsed black beans, kidney beans, corn, diced tomatoes with juices, tomato sauce, and taco seasoning. Stir well.
- Pour in the chicken or beef broth and stir again, bringing the mixture to a simmer.
- Allow to cook for 20-30 minutes, stirring occasionally. Adjust seasoning with salt and pepper before serving.
- Serve hot, topped with optional garnishes like cheese, sour cream, and avocado.
Notes
For a vegetarian version, replace the meat with additional beans or lentils. Customize toppings to suit your preferences.
