Description

A comforting and flavorful taco soup featuring ground meat, beans, and spices, perfect for chilly evenings.


Ingredients

  • 1 lb ground beef or turkey
  • 1 can black beans, rinsed and drained
  • 1 can kidney beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 2 cups beef or chicken broth
  • 1 cup onion, chopped
  • 1 cup bell pepper, chopped
  • Salt and pepper to taste


Instructions

  1. In a large pot, brown the ground meat over medium heat until cooked through. Drain excess fat.
  2. Add the chopped onion and bell pepper to the pot and sauté until softened.
  3. Stir in the black beans, kidney beans, corn, diced tomatoes, taco seasoning, and broth.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for 20-30 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot.

Notes

For extra depth, consider browning the meat with garlic or jalapeño. Leftovers store well in the refrigerator, making it a perfect meal prep option.
