A comforting and flavorful taco soup featuring ground meat, beans, and spices, perfect for chilly evenings.
Ingredients
- 1 lb ground beef or turkey
- 1 can black beans, rinsed and drained
- 1 can kidney beans, rinsed and drained
- 1 can corn, drained
- 1 can diced tomatoes
- 1 packet taco seasoning
- 2 cups beef or chicken broth
- 1 cup onion, chopped
- 1 cup bell pepper, chopped
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground meat over medium heat until cooked through. Drain excess fat.
- Add the chopped onion and bell pepper to the pot and sauté until softened.
- Stir in the black beans, kidney beans, corn, diced tomatoes, taco seasoning, and broth.
- Bring the mixture to a boil, then reduce heat and let it simmer for 20-30 minutes.
- Season with salt and pepper to taste.
- Serve hot.
