Ingredients
- 1 cup rice
- 1 lb ground beef or chicken
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 packet taco seasoning
- 1 cup diced tomatoes
- 1 cup shredded cheese
- Sour cream (optional)
- Lettuce (for topping)
- Salsa (for serving)
Instructions
- Cook the rice according to package instructions.
- In a skillet, cook the ground beef or chicken over medium heat until browned.
- Add taco seasoning and a little water; simmer for 5 minutes.
- Stir in black beans, corn, and diced tomatoes, cooking until heated through.
- Assemble the bowls by placing rice at the bottom, followed by the meat mixture.
