Description

A wholesome and satisfying bowl featuring roasted sweet potatoes, seasoned ground beef, and fresh toppings.


Ingredients

  • 1 lb lean ground beef
  • 2 tsp Worcestershire sauce
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp pepper
  • 4 small sweet potatoes
  • 1 tablespoon avocado oil
  • 1 bag shredded lettuce (8 oz)
  • 1 red onion (thinly sliced)
  • 1 pint diced tomatoes (10 oz)
  • ½ cup pickles (diced)
  • Special sauce (your choice)


Instructions

  1. Preheat your oven to 400 degrees.
  2. Peel and dice the sweet potatoes, adding them to a large bowl.
  3. Toss the sweet potatoes with avocado oil, garlic powder, onion powder, salt, and pepper.
  4. Spread them onto a lined baking sheet and pop them in the oven.
  5. Roast for 30 to 40 minutes, tossing halfway through for even cooking.
  6. While the sweet potatoes roast, heat a skillet on medium heat with some oil.
  7. Add the ground beef and cook until browned, around 8 minutes.
  8. Stir in Worcestershire sauce and the remaining seasonings, mixing well.
  9. Once the meat and sweet potatoes finish cooking, assemble the bowls.
  10. Layer the shredded lettuce, followed by the sweet potatoes, beef, red onion, tomatoes, and pickles.
  11. Drizzle with special sauce before serving.
