Ingredients
- 1 tablespoon plus 2 teaspoons olive oil (20 ml)
- 1 medium-large sweet potato, peeled and diced (300 g)
- 1 large onion, diced (150 g)
- 4 cloves garlic, minced
- 2 tablespoons chili powder (30 g)
- 4 teaspoons ground cumin (10 g)
- 5 teaspoon ground chipotle chili (2.5 g)
- 25 teaspoon (1 ml) salt
- 5 cups water (600 ml)
- 2 (15 ounce) cans black beans, rinsed (850 g)
- 1 (14 ounce) can diced tomatoes (400 g)
- 4 teaspoons lime juice (20 ml)
- 5 cup chopped fresh cilantro (15 g)
Instructions
- Warm the olive oil in a Dutch oven over medium-high heat. Mix in the sweet potato and onion, stirring frequently until the onion softens slightly, around 4 minutes. Introduce the garlic, chili powder, cumin, chipotle, and salt, and stir continuously for 30 seconds. Pour in the water and bring it to a gentle boil. Cover the pot, lower the heat to keep a soft simmer, and cook until the sweet potato becomes tender, approximately 10 to 12 minutes.
- Add the black beans, diced tomatoes, and lime juice. Turn the heat to high and let it come back to a simmer, stirring regularly. Lower the heat and let it simmer until it thickens a bit, about 5 minutes. Take it off the heat and mix in the cilantro.
Notes
- For a spicier flavor, increase the amount of ground chipotle chili or add a pinch of cayenne pepper.
- Enhance the taste by using fire-roasted diced tomatoes.
- To achieve a creamy consistency, mix in a spoonful of sour cream or Greek yogurt before serving.
