Ingredients

  • 1 tablespoon plus 2 teaspoons olive oil (20 ml)
  • 1 medium-large sweet potato, peeled and diced (300 g)
  • 1 large onion, diced (150 g)
  • 4 cloves garlic, minced
  • 2 tablespoons chili powder (30 g)
  • 4 teaspoons ground cumin (10 g)
  • 5 teaspoon ground chipotle chili (2.5 g)
  • 25 teaspoon (1 ml) salt
  • 5 cups water (600 ml)
  • 2 (15 ounce) cans black beans, rinsed (850 g)
  • 1 (14 ounce) can diced tomatoes (400 g)
  • 4 teaspoons lime juice (20 ml)
  • 5 cup chopped fresh cilantro (15 g)


Instructions

  1. Warm the olive oil in a Dutch oven over medium-high heat. Mix in the sweet potato and onion, stirring frequently until the onion softens slightly, around 4 minutes. Introduce the garlic, chili powder, cumin, chipotle, and salt, and stir continuously for 30 seconds. Pour in the water and bring it to a gentle boil. Cover the pot, lower the heat to keep a soft simmer, and cook until the sweet potato becomes tender, approximately 10 to 12 minutes.
  2. Add the black beans, diced tomatoes, and lime juice. Turn the heat to high and let it come back to a simmer, stirring regularly. Lower the heat and let it simmer until it thickens a bit, about 5 minutes. Take it off the heat and mix in the cilantro.

Notes

  • For a spicier flavor, increase the amount of ground chipotle chili or add a pinch of cayenne pepper.
  • Enhance the taste by using fire-roasted diced tomatoes.
  • To achieve a creamy consistency, mix in a spoonful of sour cream or Greek yogurt before serving.
