Ingredients

  • 600 g (1 lb 5 oz) boneless, skinless chicken breast or chicken thigh, cut into bite-sized pieces
  • 1 tsp (5 ml) sweet paprika
  • 1 tsp (5 ml) garlic powder
  • 1/2 tsp (3 ml) sea salt flakes
  • 1/2 tsp (3 ml) cracked black pepper
  • 1 egg
  • 1/2 cup (60 g) cornstarch
  • Oil, for frying, see note 1
  • 1 tsp (5 ml) freshly minced garlic
  • 1 tsp (5 ml) freshly minced ginger
  • 1/2 cup (125 ml) sweet chili sauce
  • 1/4 cup (60 ml) soy sauce
  • 1/4 cup (60 ml) apple cider vinegar or lime juice
  • Steamed rice
  • 1 spring onion (scallion), finely sliced
  • 1 tsp (5 ml) sesame seeds


Instructions

  1. Place the chicken pieces in a large mixing bowl and add sweet paprika, garlic powder, salt, pepper, egg, and cornstarch. Stir thoroughly until the mixture forms a coating around the chicken. Set this bowl aside.
  2. For the sauce, mix all the sauce ingredients in a separate medium-sized bowl. Set this bowl aside as well.
  3. In a large, deep frying pan, heat some oil over a medium-high flame. Fry the chicken pieces for 5 to 6 minutes, ensuring they are cooked through and browned evenly, turning them once during cooking. Transfer the cooked chicken onto paper towels to absorb the excess oil.
  4. Carefully remove the oil from the pan and clean it with a paper towel.
  5. Place the pan back on the stove over medium-low heat and pour in the sauce. Stir the sauce for 2 to 3 minutes until it starts to bubble and thicken slightly. Turn off the heat and add the chicken back into the pan, mixing it well so that each piece is covered with the sauce.
  6. Serve the chicken promptly over a bed of steamed rice. Garnish with finely sliced spring onion and a sprinkle of sesame seeds.
  7. Optionally, after removing the chicken, add 1–2 tablespoons of boiling water to the pan. Stir this into the remaining sauce and use it to drizzle over the finished dish.

  • Enhance the heat by adding red chili peppers to the sauce.
