Ingredients
- 6 large eggs
- 1/4 cup (60 ml) red bell pepper, finely chopped (about 40 grams)
- 1/4 cup (60 ml) green bell pepper, finely chopped (about 40 grams)
- 1/4 cup (60 ml) sweet and spicy pepper jelly (about 60 grams)
- 1/4 cup (60 ml) mayonnaise (about 60 milliliters)
- 1 teaspoon (5 ml) Dijon mustard (about 5 milliliters)
- 1/4 teaspoon (1 ml) salt (about 1.5 grams)
- 1/8 teaspoon (1 ml) black pepper (about 0.3 grams)
- 1/8 teaspoon (1 ml) cayenne pepper (about 0.3 grams)
- Chives, finely chopped, for garnish
Instructions
- Place the eggs in a pot and cover with cold water.
- Bring the water to a boil over medium-high heat.
- Once boiling, remove from heat and cover the pot.
- Let the eggs sit in hot water for 10 minutes.
- Transfer eggs to a bowl of ice water to cool.
- Once cooled, peel the eggs and slice them in half lengthwise.
- Carefully remove the yolks and place them in a mixing bowl.
- Mash the yolks with a fork until smooth.
- Add mayonnaise, Dijon mustard, salt, black pepper, and cayenne pepper to the yolks.
- Mix the yolk mixture until well combined and smooth.
- Stir in the finely chopped red and green bell peppers.
- Add the sweet and spicy pepper jelly and mix until evenly incorporated.
- Spoon or pipe the yolk mixture back into the egg whites.
- Garnish the deviled eggs with finely chopped chives.
- Refrigerate until ready to serve.
