Ingredients

  • 6 large eggs
  • 1/4 cup (60 ml) red bell pepper, finely chopped (about 40 grams)
  • 1/4 cup (60 ml) green bell pepper, finely chopped (about 40 grams)
  • 1/4 cup (60 ml) sweet and spicy pepper jelly (about 60 grams)
  • 1/4 cup (60 ml) mayonnaise (about 60 milliliters)
  • 1 teaspoon (5 ml) Dijon mustard (about 5 milliliters)
  • 1/4 teaspoon (1 ml) salt (about 1.5 grams)
  • 1/8 teaspoon (1 ml) black pepper (about 0.3 grams)
  • 1/8 teaspoon (1 ml) cayenne pepper (about 0.3 grams)
  • Chives, finely chopped, for garnish


Instructions

  1. Place the eggs in a pot and cover with cold water.
  2. Bring the water to a boil over medium-high heat.
  3. Once boiling, remove from heat and cover the pot.
  4. Let the eggs sit in hot water for 10 minutes.
  5. Transfer eggs to a bowl of ice water to cool.
  6. Once cooled, peel the eggs and slice them in half lengthwise.
  7. Carefully remove the yolks and place them in a mixing bowl.
  8. Mash the yolks with a fork until smooth.
  9. Add mayonnaise, Dijon mustard, salt, black pepper, and cayenne pepper to the yolks.
  10. Mix the yolk mixture until well combined and smooth.
  11. Stir in the finely chopped red and green bell peppers.
  12. Add the sweet and spicy pepper jelly and mix until evenly incorporated.
  13. Spoon or pipe the yolk mixture back into the egg whites.
  14. Garnish the deviled eggs with finely chopped chives.
  15. Refrigerate until ready to serve.
