Ingredients

  • 4-5 medium potatoes (about 800-1000g)
  • 1 small red onion thinly sliced
  • ½ cup (120ml) green olives chopped
  • 3 small gherkins chopped
  • ¼ cup (60ml) capers
  • â…“ cup (80ml) chopped parsley
  • 5-6 sun-dried tomatoes chopped
  • 2 tbsp (30ml) vegetable oil
  • 2 tbsp (30ml) apple cider vinegar
  • 1 tbsp (15ml) sumac
  • ½ tsp (2.5ml) chili flakes
  • salt to taste


Instructions

  1. Start by cooking the potatoes. Place whole, unpeeled potatoes in a pot of salted water and cook until they are just soft but still firm, approximately 20 minutes. Once done, drain and let them cool slightly. Remove the skins and cut them into small cubes.
  2. In a spacious mixing bowl, combine the cooked potatoes with the red onion, parsley, gherkins, green olives, capers, and sun-dried tomatoes, and gently mix them together.
  3. Pour the vegetable oil and apple cider vinegar over the salad. Sprinkle with salt, chili flakes, and sumac to add a tangy flavor. Carefully toss the ingredients to distribute the dressing and flavors evenly, being careful not to break the potatoes too much.
  4. Sample the salad and tweak the seasoning by adding more apple cider vinegar, salt, or chili flakes if necessary. Serve and enjoy the dish!
