Ingredients

  • – 4 medium zucchini (about 900g)
  • – 1/2 teaspoon (3 ml) dried Italian seasoning
  • – salt and pepper to taste
  • – 2 teaspoons olive oil (10 ml)
  • – 1 pound (454 g) ground beef
  • – 1/2 cup onion, finely diced (75g)
  • – 1 teaspoon (5 ml) minced garlic
  • – 2 cups (480 ml) tomato sauce
  • – 3/4 cup shredded cheddar cheese (85g)
  • – 1 tablespoon (15 ml) chopped parsley
  • – cooking spray


Instructions

  1. Set your oven to a temperature of 400 degrees F and lightly coat a large rectangular baking dish with cooking spray.
  2. Slice the zucchinis lengthwise and remove the ends. Carefully scoop out the insides with a spoon.
  3. Dust the zucchini shells with Italian seasoning, along with salt and pepper. Place them in the prepared baking dish.
  4. Warm the olive oil in a large skillet over medium-high heat. Add the ground beef, breaking it apart as it cooks for 4-5 minutes.
  5. Introduce the onion to the pan and continue cooking for another 4 minutes until it softens. Stir in the garlic and cook for 30 seconds more.
  6. Add salt and pepper to the beef and vegetable mixture for seasoning.
  7. Pour the tomato sauce into the skillet and let it simmer for 5 minutes.
  8. Fill each zucchini shell with the beef mixture, then sprinkle with the shredded cheddar cheese on top.
  9. Place in the oven and bake for 25 minutes until the zucchinis are tender and the cheese is melted and golden.
  10. Finish by scattering chopped parsley over the top before serving.
