Ingredients
- – 4 medium zucchini (about 900g)
- – 1/2 teaspoon (3 ml) dried Italian seasoning

- – 2 teaspoons olive oil (10 ml)
- – 1 pound (454 g) ground beef
- – 1/2 cup onion, finely diced (75g)
- – 1 teaspoon (5 ml) minced garlic
- – 2 cups (480 ml) tomato sauce
- – 3/4 cup shredded cheddar cheese (85g)
- – 1 tablespoon (15 ml) chopped parsley
- – cooking spray
Instructions
- Set your oven to a temperature of 400 degrees F and lightly coat a large rectangular baking dish with cooking spray.
- Slice the zucchinis lengthwise and remove the ends. Carefully scoop out the insides with a spoon.
- Dust the zucchini shells with Italian seasoning, along with salt and pepper. Place them in the prepared baking dish.
- Warm the olive oil in a large skillet over medium-high heat. Add the ground beef, breaking it apart as it cooks for 4-5 minutes.
- Introduce the onion to the pan and continue cooking for another 4 minutes until it softens. Stir in the garlic and cook for 30 seconds more.
- Add salt and pepper to the beef and vegetable mixture for seasoning.
- Pour the tomato sauce into the skillet and let it simmer for 5 minutes.
- Fill each zucchini shell with the beef mixture, then sprinkle with the shredded cheddar cheese on top.
- Place in the oven and bake for 25 minutes until the zucchinis are tender and the cheese is melted and golden.
- Finish by scattering chopped parsley over the top before serving.
