Ingredients

  • 1 lb (454 g) lean ground beef
  • 2 Tbsp (30 ml) vegetable oil, divided
  • Salt and freshly ground black pepper
  • 1 cup (240 g) chopped yellow onion
  • 1 cup (150 g) chopped red bell pepper
  • 1 cup (150 g) chopped green bell pepper
  • 2 cloves garlic, minced
  • 2 (411 g) cans petite diced tomatoes
  • 1 (425 g) can tomato sauce
  • 1 (411 g) can low-sodium beef broth
  • 2 1/2 Tbsp (37 ml) chopped fresh parsley, plus more for garnish
  • 1/2 tsp (2.5 ml) dried basil*
  • 1/2 tsp (2.5 ml) dried oregano
  • 1 cup (185 g) uncooked long grain white or brown rice
  • Cheddar or mozzarella cheese, for serving (optional)


Instructions

  1. For a more liquid consistency, use less rice; for a thicker and more filling soup, incorporate all of it.
  2. If planning to save some for the next day, keep the rice separate and add it to each serving individually.
  3. Store the rice in a separate container in the fridge to prevent it from becoming mushy.
  4. In a large pot, warm up 1 tablespoon of vegetable oil over medium heat. Once heated, add the ground beef and season with salt and pepper.
  5. Cook while breaking up the beef and stirring occasionally until it browns. Drain and transfer the beef onto a paper towel-lined plate, setting it aside.
  6. Add the remaining 1 tablespoon of vegetable oil to the pot, then toss in the onions, red bell pepper, and green bell pepper. Sauté for 3 minutes, then add the garlic and sauté for another 30 seconds.
  7. Mix in the diced tomatoes, tomato sauce, beef broth, parsley, basil, oregano, and the cooked beef. Season with salt and pepper as desired.
  8. Bring the mixture to a gentle boil, then lower the heat, cover, and let it simmer for 30 minutes, stirring now and then.
  9. As the soup simmers, cook the rice according to the package instructions, and once the soup is done simmering, stir in the preferred amount of cooked rice.
  10. Serve hot with a sprinkle of optional cheese and a garnish of fresh parsley.
